Deschutes Brewery in Bend Oregon was founded in 1988 by Gary Fish and is now one of the Top 10 Craft Breweries in the U.S. It shares the honor of the top ten with breweries such as Yuengling, Boston Beer Company, Sierra Nevada, and New Belgium. But there is more to Deschutes than just amazing beer.
I sat down with Gary Fish of Deschutes Brewery back in September of 2016. I had just tasted the brand new Black Butte Whiskey that he dreamed up with Jim Bendis of Bendistillery. I recorded this audio while covering the story to do a video for the online version of a magazine I write a beer column for. But this interview turned a corner and evolved into a story of flavors and the future of beer, a story that had to get out.
